Indulge in this decadent and Creamy Red Rice Pudding using organic red rice from @lotusfoods. Each spoonful is a delicate balance of tender rice grains cooked in a luscious blend of milk, sugar, cinnamon and a hint of vanilla. The addition of puréed and fresh strawberries makes this a berrylicious treat, perfect to serve as a sweet delight for your sweetheart on Valentine’s Day! Whether enjoyed warm or chilled, this dessert is a celebration of love and wholesome goodness.

Red rice, rich in antioxidants and essential minerals such as zinc, calcium, and iron, serves as a wholesome choice for nourishing the body. I rely on Lotus Foods for their exceptional rice products, guaranteeing the use of only the finest ingredients in my recipes.

Creamy Red Rice Pudding
Ingredients:
4 cups milk
2 cups half and half
2 cups Lotus Foods Organic Red Rice
1/3 cup granulated sugar
1 cup puréed strawberries
½ tbsp vanilla
½ tsp ground cinnamon powder
For garnish: sliced strawberries and shredded coconut

Lugaw is the Filipino version of plain rice porrid

Lugaw is the Filipino version of plain rice porridge that can be loaded with different types of toppings for a delicious and heartwarming meal. It’s perfect for rainy days or when you are feeling under the weather and need some comfort food!

2 inch ginger, chopped
6 cloves garlic, minced
3/4c sweet rice, rinsed
6 cups water
Safflower threads or turmeric for color
1 1/2 tsp sea salt (adjust to taste)
Topping: toasted garlic, green onions, hard boiled egg, lemon wedges, crispy pork rind

Sauté ginger and garlic in oil. 2-3 mins.
Add rice and water. Cook until rice is soft and thickened, about 20-25 mins.
Add safflower or turmeric and season with sea salt. Simmer for a few more minutes and serve topped with toasted garlic, green onions, hard boiled egg, lemon wedges, and crushed pork rinds.

Binatog is a simple, classic Filipino street food that you can easily make at home. 🇵🇭🌽

Ingredients:
1-25oz can hominy
1 can coconut milk
Topping combinations:
Grated coconut and salt
Condensed milk and salt
Butter
Coconut sugar and salt

Place can of hominy (including the liquid) in a pot and add coconut milk. Simmer for 10 minutes. Remove from heat.

Scoop in a cup, and top with your desired combination of grated coconut, salt, condensed milk, butter or coconut sugar.

Let’s make a bowl of comforting Chicken Sotanghon Soup in less than 30 minutes! 🍲

Recipe:
1 pound chicken thighs, cubed
3 garlic cloves, minced
1/4 c chopped onion
1 pkg dried shiitake mushrooms
1 small carrot, julienned
3 cups water
2 tsp anatto seeds
1/2 pkg Vermicelli noodles
Sea salt to taste
Black pepper to taste
Topping: green onions

Prep: soak dried shiitake mushrooms in 1 cup warm water and anatto seeds in 1/4 cup warm water for 15 minutes.

Season chicken with sea salt. Fry for 2 mins.
Sauté garlic and onion. Add shiitake and carrots. Cook for 3 mins.
Add water and bring to a boil.
Season with anatto water, salt and black pepper.
Add vermicelli noodles. Cook until softened, about 5 minutes.
Serve with green onions on top.
