I have fond memories of this colorful Coconut Milk Jelly when I was growing up because it’s one of those desserts that I always dig into first at special occasions such as birthdays, Christmas and New Year. This jelly is usually part of an elaborate feast that can feed an entire army because if you’ve been lucky enough to attend an event at a Filipino’s house, you know there’s no shortage of food! Commonly known as “Cathedral Window”, it is reminiscent of the mosaic glass windows that you’ll find at catholic churches. As a kid, I loved this colorful dessert and the way it jiggles since its made purely with gelatin.
I’ve always wanted to recreate this Coconut Milk Jelly without using boxed gelatin that contains a ton of sugar and artificial food coloring. There are a few gelatin brands on the market and Vital Proteins is one of the best that I’ve come across last year when I attended Paleo f(x). After hauling 2 tubs of the Collagen Peptides back home, it’s been my go-to mix in for my morning coffee and halfway through my first tub, I’ve started to notice the benefits of adding collagen into my daily routine. My hair and nails have been growing faster than usual and the occasional pain I get in my knee joints have been far and few between.
When I thought about this Coconut Milk Jelly recipe, I knew the Beef Gelatin from Vital Proteins would be the perfect one to use. Not only is this a fun dessert to eat, it is also good for your skin, bones, joints, and gut! You get the same health benefits from either Beef Gelatin or Collagen Peptides but the main difference between the two is Beef Gelatin gels when mixed with water and Collagen Peptides dissolved in it.
A gelatin ring is a traditional mold used for this dessert but I wanted to use something that everyone has at home. A loaf pan works just as well and makes it easier to portion out into individual slices. Using fruits and vegetables is the best way to create the colorful red, green and yellow jelly cubes without having to add any artificial food coloring. Don’t fret, you won’t even taste the spinach in green jelly!
Once the individual colored jelly cubes are ready, they are molded together with a sweet and creamy coconut honey gelatin. It sets really fast in the fridge (about 1- 1/2 hours) so you won’t have to wait too long to enjoy this healthy, fun gelatin treat!
Coconut Jelly
Ingredients
Green Jelly
- 1/2 cup baby spinach packed
- 1/2 cup fresh or frozen peaches*
- 1/2 cup water
- 2 1/2 tbsp gelatin I use Vital Proteins
Yellow Jelly
- 1/2 cup fresh or frozen peaches*
- 1/4 cup water
- 2 1/2 tbsp gelatin
Red Jelly
- 1 cup fresh watermelon
- 1/4 cup water
- 2 1/2 tbsp gelatin
Coconut Milk Jelly
- 3/4 cup coconut milk
- 2 1/4 cup water
- 1/2 cup honey
- 1/2 cup gelatin
Instructions

Prepare the green, yellow and red jelly one at a time using the following steps:

Place all ingredients in a blender except the gelatin and blend until smooth.

Strain the juice to remove pulp and foam. You should be left with 1 cup of fruit juice.

Pour fruit juice into a small saucepan.

Sprinkle gelatin evenly on top. Let it bloom for 1 minute. (* This step ensures that the powdered gelatin is absorbed into the liquid so it doesn't clump when heated up.)

Turn on heat to medium-low. Stir until the gelatin has completely dissolved into the fruit juice. This should take no longer than 1 minute.

Remove from heat and pour the gelatin into a 4x4 glass container.

Place it in the fridge uncovered and let it set for at 45 mins - 1 hour.
Once the green, yellow and red jelly have set:

Remove the colored jelly from the glass mold and cut them into 1/2 inch cubes.

Randomly arrange the jelly cubes in a 9x5 loaf pan. Set aside.
Prepare the Coconut Milk Gelatin:

Add coconut milk, water, and honey in a small saucepan. Stir to mix well.

Sprinkle gelatin evenly on top. Let it bloom for 2-3 minutes.

Turn on heat to medium-low. Stir until the gelatin has completely dissolved. This should take no longer than 2-3 minutes.
Recipe Notes
When using frozen fruit, defrost first to soften them up.
