These Easy Apple Fritters takes a few minutes to prep and they fry up quickly to create delicious pillows of fluffy treats!
One of my favorite restaurants, Shenandoah at the Arbor in Los Alamitos, CA serves some really good free apple fritters as an appetizer before dinner. The problem is, they’re not gluten-free. I’ve longed to re-create those goodies but felt a little intimidated because it seemed complicated to make.
I realized I can use a gluten-free pastry mix such as the Biscuit and Baking mix from Bob’s Red Mill instead of trying to figure out what gluten-free flour combination I need (which I’ll probably mess up!). After mixing together the eggs, water, shredded apple, cinnamon and swerve (a low carb sugar substitute), the batter was ready to be fried!
Cooking them in avocado oil four at a time makes it easy to keep a close eye on each batch so they don’t burn. These Easy Apple Fritters came out fluffy, crispy and light and so much better IMO that it’s gluten based cousin!
Easy Apple Fritters
Ingredients
- 2 cups gluten-free biscuit and baking mix
- 2 large eggs
- 1/2 cup water
- 1/4 cup Swerve
- 1 1/2 tbsp cinnamon
- 1 cup shredded Honeycrisp apple
- 2 cups avocado oil
- 1/2 cup powdered sugar
Instructions

In a large bowl, place the biscuit mix, eggs, water, swerve, cinnamon and shredded apple. Mix well.

Heat the avocado oil in a small saucepan over medium-high heat, about 3 minutes.

Using a 1-inch cookie dough scooper, scoop batter and gently drop it in the hot oil. Cook each side for 2 minutes until golden brown.

Fry apple fritters in batches - 4 at a time.

Place cooked fritters on a paper towel lined plate to drain the excess oil.

Once all of the fritters are cooked, toss with powdered sugar to coat evenly.

what can I substitute for swerve? I have Agave, maple syrup or honey or plain sugar.
