Make these little bites of chocolatey goodness for a gluten-free sweet treat after a filling meal!
I’ve been on a roll with creating sweet treats lately so I have another super easy one for you. If you made my Brownie Stuffed Chocolate Chip Cookies and ended up having some leftover brownie batter, you can turn them into another fun dessert.
These White Chocolate Pistachio Brownie Bites are a step above the good ol’ brownie because they’re drizzled with luxurious white chocolate and covered with a generous amount of crushed pistachios.
I used the Gluten-Free Brownie Mix from Bob’s Red Mill to make these White Chocolate Pistachio Brownie Bites. I love their mixes so much because it makes me feel like a rock star baker!
Substitute any type of nuts you want – cashews, pecans macadamia or a combination of your favorites. Jazz it up even more and add chocolate chip pieces, crushed gluten-free pretzels. You get my drift! The possibilities are endless with these little brownie bites.
The white chocolate-pistachio is my go-to combo and I know you’ll enjoy it as much as I do!
White Chocolate Pistachio Brownie Bites
Ingredients
Brownie bites:
- 1 bag Bob's Red Mill Gluten-free Brownie mix
- 3 large eggs
- 1/2 cup ghee melted
Toppings:
- 2 tbsp ghee
- 1 cup white chocolate chips
- 1/2 cup roasted unsalted pistachios, shelled and chopped
Instructions

In a medium-sized bowl, add the brownie bite ingredients. Mix well.

Cover and store in the fridge for at least 30 minutes to 1 hour to firm up.

Preheat the oven at 350F.

Line a baking sheet with parchment paper.

Scoop 1 tsp (about 10 grams) of brownie mix and roll into a ball.

Place it on the parchment-lined baking sheet.

Repeat until you have about a dozen brownie bites.

Return the remaining brownie mix to the fridge so they don't soften up.

Bake in the oven for 8 minutes.

Transfer brownies to a cooling rack to cool.
Prepare the topping:

In a small bowl, add ghee and white chocolate chips.

Microwave for 45 seconds.

Stir and microwave for another 30 seconds until the chocolate chips have throughly melted.

Use a teaspoon to drizzle melted white chocolate on top of the brownie bites.

Add a generous sprinkle of chopped pistachios on top.

Let it cool completely for another 15 minutes.
