This Instant Pot Green Rice is another fun spin on regular rice. If you’re a fan of my Turmeric Garlic Rice, you will enjoy this one as well! Avoiding rice and want something low carb? I have a cauliflower rice option at the bottom of the recipe.
There is a chain restaurant here in Southern CA called SuperMex that my family and I go to when we are in the mood for some Mexican food. They have an extensive menu with reasonable prices and the servings are very generous.
Diego will always order the Chicken Bowl with Green Rice from the kids meal. He loves this green rice and the color makes it fun to eat. Sometimes I would order the same exact thing from the regular menu because it’s very filling and the rice is really delicious.
Of course the food blogger in me always finds a way to replicate meals that I’ve enjoyed when dining out. I created a quick and easy green sauce that can be mixed in with rice before letting it cook in the instant pot.
Just a few simple ingredients can breathe life into plain rice making this Instant Pot Green Rice a great side that goes with almost anything!
Instant Pot Green Rice
Ingredients
- 1 cup roughly chopped cilantro leaves
- 1/2 cup sliced poblano pepper about half a pepper
- 3 stalks green onions sliced
- 3 garlic cloves
- 2 1/4 cups vegetable stock
- 2 cups uncooked jasmine rice
- 1 teaspoon cooking oil of your choice
Instructions

Place the cilantro, pepper, green onion, garlic and 1/4 cup of vegetable stock in a food processor.

Pulse for 10 seconds to puree. Scrape the sides of the food processor and puree for another 10 seconds.

Place the rice in the instant pot. Rinse it with tap water and drain.

Add the remaining vegetable stock, cilantro puree and cooking oil to the rice. Stir to mix everything together.

Cover the instant pot and set the venting knob to the sealing position.

Press the RICE button and set the timer for 10 minutes.

Once the rice is done,you can let the pressure release naturally or do a quick release.

Fluff the rice with a wooden spoon before serving.
Recipe Notes
Cauliflower Rice Option
Prepare the cilantro sauce and set is aside. Saute the riced cauliflower over medium high heat for 5 minutes. Mix in the cilantro sauce and cook for an additional 3 minutes. Remove from heat immediately.
