I love rice. A lot. Not a week (or a day!) goes by without rice making an appearance in at least one of my meals. My go to is my beloved Turmeric Garlic rice because it’s aesthetically pleasing, it smells amazing and is made with ingredients that turn regular bland rice more nutritious. Last week I’ve been crushing some Kimchi Fried Rice because bacon and kimchi together is super yummy.
Different meals call for different kinds of rice so I made this Coconut Rice both stovetop and in an Instant Pot. You can use either method and both will produce the same consistency and flavor. The coconut flavor isn’t overpowering so you wont get hit with that strong coconut taste!
I’ve been into curries lately since I’ve had that Himalayan curry during my trip to Denver in January. Thai, Indian, Burmese, you name it, I like them all! Fluffy basmati rice is usually paired with curry but Coconut Rice is so much better. It cooks in the same amount of time as regular rice but the addition of coconut milk and a little coconut sugar gives it a nice browned crust of flavor at the bottom of the pot. When the cooked rice is fluffed with a bamboo spoon, those brown bits get distributed evenly and turns each spoonful of rice super yummy!

Coconut Rice (Instant Pot and Stovetop)
Ingredients
- 1 cup jasmine rise rinsed
- 1 cup full fat coconut milk
- 1 tsp coconut sugar
- 1/4 tsp sea salt
Instructions
(Instant Pot Method)

Add all ingredients in the Instant Pot and mix.

OPTIONAL: If your coconut milk has clumps, press the Saute button and heat the coconut milk rice for 1 minute or until there aren’t any clumps left. Stir.

Cover and press the Rice button which cooks for 10 minutes.

Make sure the valve is pointed to the Sealing position.

Fluff rice with a bamboo spoon or fork once the rice is cooked.
(Stovetop Method)

Add all ingredients in a pot. Mix and turn on the heat to medium-high. Let it boil.

Once its boiling, reduce the heat to low.

Cover and cook for 15-20 minutes.

Turn off the heat and let it sit covered for 10 minutes.

Fluff rice with a bamboo spoon or fork once the rice is cooked.
