One of my secrets to a successful weekly meal prep is to include recipes that are versatile so they can be mixed and matched with the different veggies and carbs that I’ve also prepared during the same meal prep. For me, these are usually pan-seared chicken thighs, oven baked salmon and Pork Carnitas. Now that I’ve tried this Slow Cooker BBQ Pulled Pork from the 21-Day Sugar Detox Guide, I’m definitely adding this simple yet flavorful dish to my meal prep rotation!
I made it this past weekend and I’ve eaten it for both lunch and dinner on the same day. For lunch, I topped it on some butter lettuce and ate it with crispy tostones, fermented carrots (Yin Yang Carrots by FireFly), avocado and spicy pickles. For dinner, I mixed it in with Filipino Pancit (recipe from my book One-Pot Paleo) and had some more crispy tostones and avocados on the side. See what I mean about using versatile recipes? I was able to make two totally different meals using the BBQ Pulled Pork as my protein.

Since my Instant Pot has finally earned a permanent spot on my kitchen counter, I made this Slow Cooker BBQ Pulled Pork in the Instant Pot. After 45 minutes, I had a bowl of fork tender pork ready to be eaten. Not only was it super tasty, it literally took me no more than 5 minutes to prep the seasoning, rub it all over the pork, smash the garlic and pop everything in the Instant Pot.
I think the next time I make this, I’ll be having it for breakfast in the form of a yummy pulled pork omelette with some goat cheese. Mmmm!

Slow Cooker BBQ Pulled Pork (21-Day Sugar Detox Daily Guide)
Ingredients
- 4 lbs pork shoulder
- 2 tbsp BBQ Spice Blend below
- 1 cup chicken broth store-bought or homemade
- 10 cloves garlic peeled
BBQ Spice Blend
- 6 tbsp paprika
- 3 tbsp chili powder
- 3 tbsp garlic powder
- 3 tbsp onion powder
- 1 tbsp sea salt
- 1 tbsp ground black pepper
- 1 tsp ground cinnamon
Instructions

Season the pork shoulder liberally with the spice blend on all sides.

Place the meat, broth, and garlic cloves in a slow cooker and cook on low for 6 to 8 hours.

Remove the pork from the slow cooker and reserve any remaining liquid. Allow it to cool slightly, then shred it with two forks.

Taste the shredded meat and spoon more of the reserved liquid over it if needed for additional flavor.

Store in an airtight container in the refrigerator for up to 5 days.
To Make This in an Instant Pot (electric pressure cooker)

Cut the pork into 2-3 inch pieces and cook on high pressure for 45 minutes.
