I’ve been making these Shake N Bake Chicken Tenders for a while now and I realized I haven’t had the chance to share the recipe! This was on my menu during yesterday’s Sunday meal prep because I needed something that I can quickly throw together and cook in the oven.
If you’re like me who absolutely hates dry chicken tenders, you will love how juicy this turns out thanks to the mustard coating on the chicken! Don’t worry, you won’t even taste the mustard. Pinky promise. The seasoning blend for this Shake N Bake Chicken Tenders is so much better than the boxed and preservative laden shake and bake mix that you’ll find at grocery stores. Remember eating that growing up?
This flavor-packed, egg-free finger food recipe is best eaten straight out of the oven but also tastes great at room temperature as part of a packed lunch!
Shake N Bake Chicken Tenders
Ingredients
- Cooking oil spray of your choice
- 3/4 cup cashew meal or cashew flour
- 1/2 cup nutritional yeast
- 1 1/2 tbsp garlic powder
- 1 1/2 tbsp onion powder
- 1 tbsp dried rosemary roughly chopped
- 1 1/2 tsp sea salt
- 1 tsp ground black pepper
- 2 tbsp yellow mustard
- 2 lbs chicken tenders
Instructions

Preheat the oven to 375F.

Place a baking rack on top of a baking sheet. Lightly spray the rack with cooking oil. Set aside.

In a medium bowl, add cashew meal, nutritional yeast, garlic powder, onion powder, rosemary, sea salt and black pepper. Mix well and set aside.

In a large bowl, add chicken tenders and yellow mustard. Gently mix together until the chicken tenders are coated evenly.
Pick one of 2 ways to coat the chicken:

In a gallon sized zip top bag, add chicken and breading. Seal completely and shake the bag until each chicken tender is coated with the breading.

Arrange the chicken tenders side by side on the baking rack.

Individually roll each piece of chicken tender in the breading and place it on the baking rack.

Lightly spray the top of the chicken tenders with cooking oil so that it browns nicely.

Bake the chicken tenders for 15 minutes.

Turn on the broiler on HIGH and bake for another 3 minutes. Make sure you watch it closely at this point so it doesn't burn!!

Let it cool for a few minutes before serving.
Recipe Notes
- Turn these into Chicken Nuggets by cutting each chicken tender into thirds before coating with the breading.
- Almond meal is a good substitute for Cashew meal. (Can’t find either one? Make your own by pulsing raw almonds or cashews in a food processor until it has a course, flour-like texture.)
- If you don’t have a baking rack, lightly spray a baking tray with your choice of cooking oil and place the seasoned chicken tenders directly on the tray.
- If your oven doesn’t have a broil setting, just continue baking for another 5 minutes.
