Easy Apple Fritters

Ingredients

cups
gluten-free biscuit and baking mix
2
large eggs
1/2
cup
water
1/4
cup
Swerve
1 1/2
tbsp
cinnamon
1
cup
shredded Honeycrisp apple
2
cups
avocado oil
1/2
cup
powdered sugar
Instructions
In a large bowl, place the biscuit mix, eggs, water, swerve, cinnamon and shredded apple. Mix well.
Heat the avocado oil in a small saucepan over medium-high heat, about 3 minutes.
Using a 1-inch cookie dough scooper, scoop batter and gently drop it in the hot oil. Cook each side for 2 minutes until golden brown.
Fry apple fritters in batches - 4 at a time.
Place cooked fritters on a paper towel lined plate to drain the excess oil.
Once all of the fritters are cooked, toss with powdered sugar to coat evenly.
