Chicken wings and buffalo sauce are like two peas in a pod but I wanted something different and not slathered in sauce for a change. I decided to make a homemade lemon pepper seasoning that gives a fresh burst of flavor and a peppery kick to oven baked chicken wings. This definitely tastes better than store bought seasoning and does not have any added preservatives!
Lemon Pepper Chicken Wings
Ingredients
- 2 lbs chicken wings
- 1 tbsp lemon juice
- 2 tbsp lemon zest approx 3-4 lemons
- 1 tbsp freshly cracked black pepper
- 1 tsp salt to taste
- 1/4 cup ghee melted
Instructions

Preheat oven to 375F.

Cover a baking sheet with foil and place a baking rack on top.

Pat chicken wings dry (remove as much moisture as you can)

Place chicken wings on the rack making sure they are evenly spaced out.

Roast for 12 - 15 mins and flip them to cook the other side for another 12 - 15 mins.

Check it periodically to ensure that it does not get overcooked.

While chicken is cooking, combine together lemon juice and melted ghee in one bowl and the lemon zest, black pepper and salt in another.

Once chicken is cooked, toss it with the lemon-ghee mixture until evenly coated.

Then sprinkle the lemon pepper seasoning on the chicken and toss until it is well distributed.

Serve hot.

Do these wings or legs have any hot sauce on them?? They look a little reddish in the photo. Do you recommend any hot sauce to go with these?

No hot sauce at all. The reddish is more golden brown when I made these and its probably the lighting when I took the photo that made it look red. I don’t recommend adding hot sauce since the lemon pepper plus melted ghee is more than enough to give it a lot of flavor. Its not saucy like the buffalo ones, more like a drier/less oily type of wings. Definitely let me know when you try it!

These deserve five stars not three! We made these for Super Bowl 2016 and they are wonderful! I used America’s test kitchen recommendations baking on 475 degrees to get crispy and also had tossed the wings with salt prior to baking…45 mins total flipping half way. Then you broil them until golden and crispy. Then toss with your wing mixture. You would never know they aren’t fried. They were wonderful and the fam gobbled them up!
