Filipino Lechon Manok
Ingredients
- 2 tbsp garlic minced
- 2 tbsp ginger grated
- 3 stalks lemongrass chopped
- 3 stalks green onions chopped
- 1/4 cup brown sugar
- 1/2 cup coconut aminos (or 1/4 cup soy sauce)
- 1/4 cup calamansi juice (or 1/4 cup lemon juice)
- 2 tbsp fish sauce
- 1 tsp sea salt
- 1 tsp black pepper
- 2 tbsp oil
- 3 pounds bone-in chicken thighs or legs
Instructions

Combine all ingredients except the chicken, in a gallon sized zip top bag.

Mix marinade well to combine.

Add chicken and make sure each piece is coated with the marinade.

Place bag in the fridge for at least 4 hours or preferably overnight.

Cook in the air fryer at at 380F for 15 mins. Flip and cook for another 8 minutes until the internal temperature reaches 165F.

Let cool for 10 mins before seving.
